The Super Bowl: Chopped Salad with a Signature Spin

“Life is short, eat good food” became our family motto several months ago. Since then, we’ve been making an effort to eat mindfully — and healthily. This recipe came about after much staring at the CSA (community-supported agriculture) box from Penn’s Corner Farm Alliance. This salad is nearly vegan and nearly raw, except for the Parmesan cheese and the cooked rice. It’s quick to make as soon as you set up the knife and cutting board. You can substitute anything and add or eliminate things, too, depending on what’s in season. We think it’s a great dish to bring along for holiday parties since a little goes a long way. Just be sure to mix it up fresh each time you serve it, since the flavors tend to meld together quickly and you don’t want to miss that surprising pop of flavor you get with each bite. Best news of all? After eating it, my father said it made him feel good all day. What’s better than that?
